Basanti Pulao (Mishti Pulao) is more than just a dish; it is an emotion tied to Indian celebrations. Characterized by its vibrant yellow hue, fragrant whole spices, and a delicate balance of sweetness, a flawless Pulao relies entirely on one crucial element: the structural integrity of the rice.

This meticulous aging process reduces the internal moisture content. Furthermore, our traditional double-steaming process drives the natural oils and proteins deep into the core of the grain. The result? Extra-long grains that absorb the rich ghee and saffron without ever losing their firm, fluffy shape.
The Ingredients
- 2 Cups NavaDhaara Premium Banskati Rice
- 4 tbsp Pure Cow's Ghee
- 10-12 Cashew Nuts & Raisins
- Whole Spices (3 Cardamom pods, 1 inch Cinnamon, 4 Cloves, 2 Bay Leaves)
- 1 tsp Turmeric Powder & a pinch of Saffron strands soaked in warm milk
- 2 tbsp Sugar (adjust to taste) & Salt
- 1 tbsp finely grated Ginger
The Method
- The Wash: Rinse the Banskati rice gently until the water runs clear. Because we do not use chemical water polish, the water will clear up quickly. Soak for exactly 30 minutes, then drain completely and air dry.
- The Marinade: Toss the air-dried rice with half the ghee, turmeric, ginger, and garam masala powder. Let it rest for 15 minutes to lock in the aroma.
- The Tempering: Heat the remaining ghee in a heavy-bottomed pan. Sizzle the whole spices until fragrant. Fry the cashews and raisins until golden.
- The Alchemy: Gently fold in the marinated Banskati rice. Toast on a low flame for 3-4 minutes. Pour in exactly 3.5 cups of warm water, salt, and sugar.
- The Simmer: Cover tightly and let it simmer on the lowest heat for 15 minutes. Fluff with a fork, pour the saffron milk over the top, and serve warm.
