Aromatic Jeera Ghee Rice with Caramelized Onions

The Ingredients
- 1.5 Cups NavaDhaara Jeerakati Rice (Soaked for 20 mins)
- 2 tbsp Premium Ghee
- 1.5 tbsp Cumin Seeds (Jeera)
- Whole Spices (2 Cloves, 1 small Cinnamon stick, 1 Bay Leaf)
- 1 large Onion, thinly sliced and fried until deeply caramelized (Birista)
- Fresh Coriander for garnish
The Method
- The Prep: Drain the soaked Jeerakati rice completely. It is vital that the rice is free of excess moisture before it hits the pan.
- The Infusion: Heat the ghee in a wide, heavy-bottomed pan. Add the whole spices and the cumin seeds. Let them crackle and release their oils into the ghee for about 30 seconds.
- The Toast: Add the drained Jeerakati rice to the pan. Gently stir-fry the grains in the spiced ghee for 3-4 minutes on medium heat. This coats the grains in fat, ensuring they remain perfectly separate and non-sticky after cooking.
- The Cook: Add exactly 2.5 cups of boiling water and salt. Cover tightly and cook on the lowest simmer for 10-12 minutes.
- The Finish: Turn off the heat and let it rest covered for 5 minutes. Fluff gently with a fork and garnish heavily with the sweet, caramelized onions and fresh coriander.
