The Ingredients

  • 1.5 Cups NavaDhaara Miniket Rice
  • Juice of 2 large fresh Lemons
  • 1/2 Cup fresh Coriander (tightly packed, finely chopped)
  • 1 tsp Mustard Seeds & 1 tsp Urad Dal (split black gram)
  • 2 Green Chilies (slit) & a sprig of Curry Leaves
  • 1/4 Cup Roasted Peanuts
  • 1 tbsp Sesame Oil

The Method

  1. The Base: Cook the NavaDhaara Miniket rice until fluffy. Spread it out on a wide plate to cool slightly. Miniket’s naturally non-sticky texture makes this incredibly easy.
  2. The Tempering: Heat sesame oil in a wok. Add mustard seeds and let them crackle. Toss in the Urad dal and roast until golden brown.
  3. The Aromatics: Add the green chilies, curry leaves, and roasted peanuts. Sauté for 30 seconds to release their essential oils.
  4. The Toss: Turn off the heat. Pour the hot tempering over the cooled rice. Add the fresh lemon juice, salt, and the mountain of fresh coriander. Toss gently to combine. Serve with a side of cool yogurt or pickle.
