The Ingredients
- 1 Cup NavaDhaara Dudheswar Rice
- 1 Cup Yellow Moong Dal (Split green gram)
- 1 Cup Mixed Winter Vegetables (Peas, Carrots, Cauliflower, Potatoes)
- 2 tbsp Pure Ghee
- 1 tsp Cumin Seeds & 1 Bay Leaf
- 1 tsp Turmeric, 1/2 tsp Cumin powder, 1/2 tsp Garam Masala
- Fresh Ginger paste & Green Chilies
The Method
- The Roast: In a dry pan, gently roast the yellow Moong Dal until it releases a nutty aroma. Wash the roasted dal and the Dudheswar rice together until the water runs clear.
- The Sauté: Heat ghee in a heavy-bottomed pressure cooker. Add the cumin seeds, bay leaf, ginger paste, and chilies. Toss in your mixed vegetables and sauté for 5 minutes.
- The Simmer: Add the washed rice and dal mixture along with the turmeric and cumin powder. Stir for 2 minutes to coat the grains in the spiced ghee.
- The Magic: Pour in 6 cups of water and salt. Pressure cook for 4 whistles. Once the pressure releases, finish with a heavy sprinkle of Garam Masala and a final, generous spoonful of raw ghee on top.
