The Ingredients
- 1 Cup NavaDhaara Miniket Rice
- 2 Cups Fresh, thick Curd (Yogurt)
- 1/2 Cup Warm Milk (prevents the curd from souring)
- 1 inch Ginger (finely grated)
- Tempering: Mustard seeds, Curry leaves, Asafoetida (Urad dal), Dried red chilies
- Garnish: Fresh Pomegranate arils and Coriander
The Method
- The Soft Boil: Cook the Miniket rice with slightly more water than usual (a 1:3 ratio) until it is very soft. While it is still warm, mash it gently with the back of a spoon.
- The Creamy Mix: Allow the mashed rice to cool to room temperature. Fold in the fresh curd, warm milk, grated ginger, and salt. Mix until it achieves a silky, creamy consistency.
- The Sizzle: In a small pan, heat a teaspoon of oil or ghee. Crackle the mustard seeds, add the Urad dal, red chilies, and curry leaves.
- The Assembly: Pour the sizzling aromatic oil over the creamy rice. Garnish generously with ruby-red pomegranate arils for a burst of sweetness and crunch.
