Why True Biryani Demands Patience

A great biryani is unforgiving if you use inferior rice. Because our Banskati is farm-sourced door-to-door and slow sun-dried, the grains possess an extraordinary capacity for elongation. When layered over rich marinades, NavaDhaara Banskati absorbs the deep flavors of the broth while maintaining a distinct, non-sticky bite—ensuring you never end up with a clumpy dish.

The Ingredients

  • 3 Cups NavaDhaara Banskati Rice (washed and soaked for 40 minutes)
  • 500g Marinated Chicken or Mutton (yogurt, biryani masala, ginger-garlic)
  • 1 Cup Crispy Fried Onions (Birista)
  • Whole Spices (Star Anise, Mace, Black Cardamom)
  • Kewra Water and Rose Water
  • Saffron soaked in warm milk

The Method

  1. Parboiling the Grain: In a large pot of heavily salted boiling water containing whole spices, drop in the soaked Banskati rice. Cook only until it is 70% done (the grain should still snap when bitten). Drain immediately.
  2. The Foundation: In a heavy copper Handi, lay down the slow-cooked, marinated meat along with its rich gravies.
  3. The Layering: Gently spread the parboiled Banskati over the meat. Top with crispy onions, fresh mint, ghee, and generous splashes of saffron, Kewra, and Rose water.
  4. The Dum: Seal the edges of the pot with wheat dough to trap the steam. Cook on a very low flame for 30 minutes. The trapped heat will finish cooking the rice, elongating it to double its size, resulting in a flawless royal feast.
